French Onion Soup with Cheesy French Toast

I absolutely adore french onion soup!  It’s especially delicious on a cold rainy day.  I found this recipe on one of my favorite bloggers sites, and plan on preparing it this weekend.  I’ll update this post after I make it.  Most french onion soup recipes call for you to prepare the toast under the broiler.  With this recipe, the toast is actually french toast.  It’s egg dipped french bread, fried in a skillet, with butter and parmesan cheese.  Then you place it on top of the soup, cover it with gruyère cheese and melt it under the broiler. That had me sold!  This soup gets bonus points because it’s first prepared in the Crock-Pot!  I cannot wait to try this dish!
